Issue body
When a charm uses `source-subdir` (such as in a monorepo), the `poetry`, `python`, and `uv` plugins look for `src/` and `lib/` in `part_build_dir` rather than `part_build_subdir`. This results in the charm's source code and libraries not being copied into the stage/prime directories.
