- changes gradle installation in the Makefile from the deb package to the snap
- re-enables the gradle plugin integration test without the gradle wrapper
- fixes small fixture issues that were causing the enabled test to fail
- removes the unused proxy setup in the integration test
- docs: updates reference example to use `build-snaps` and remove the incorrect `build-environment`
