Issue body

### Bug Description In the metadata retrieved via the API, we see output like `<` instead of `<`. For example, see the build at https://qastaging.launchpad.net/~ines-almeida/+snap/sleepy-test-fetch-service/+build/2298615 In order to rule out an issue with Launchpad, we directly ran e.g. ``` curl -X GET -v http://localhost:9999/session/7e01f77195764ab9ac7e738b907b3c88 ``` and got the same output, see https://pastebin.canonical.com/p/WD9TmxPsny/. This is especially common in email addresses, e.g. `author-email":"Ubuntu Kernel Team <kernel-team@lists.ubuntu.com>`. ### To Reproduce - run a build where email addresses are involved - check output ### Relevant log output ```shell https://pastebin.canonical.com/p/WD9TmxPsny/ ```
