python2 plugin expects pip to be called pip2

Issue body
When running snapcraft on xenial using "plugin: python2" in my snapcraft.yaml, I get the following error:
python2: can't open file '/path/to/working/directory/parts/script/install/usr/bin/pip2': [Errno 2] No such file or directory
Command '['/bin/sh', '/tmp/tmppwo5dmh2', 'python2', '/path/to/working/directory/parts/script/install/usr/bin/pip2', 'install', '--global-option=build_ext', '--global-option=-I/path/to/working/directory/parts/script/install/usr/include/python2.7', '--target', '/path/to/working/directory/parts/script/install/usr/lib/python2.7/site-packages', '.']' returned non-zero exit status 2
It works, however, if I then copy pip and make give it the name "pip2":
cp parts/script/install/usr/bin/pip parts/script/install/usr/bin/pip2
I imagine therefore, that it simply expects pip to be called pip2
